Beef Taquitos

Rolled beef taquitos made from ground chuck seasoned with onion and garlic, cumin, tomato sauce and mild green chilies. Taquitos make a great appetizer or main dish.
Ingredients -
 
1 pound Ground Chuck
1/4 teaspoon Garlic, minced
1/4 cup Onion, minced
1 1/2 teaspoons Cumin
1/2 cup Tomato Sauce
1/2 cup Mild Green Chiles, chopped (canned)
12 Corn Tortillas
Oil
 
Preparation:
 

1. Brown the ground chuck and drain off any fat.

2. Add garlic and onions and saute until onions are transparent and soft.

3. Add cumin, tomato sauce, and chilies to garlic and onions.

4. Simmer additional 5 minutes.

5. Set taquitos mixture aside.

6. Warm tortillas in a large oiled skillet until tortillas are soft enough to roll taquitos.

7. Place taquitos mixture in line acorss center of tortilla.

8. Roll tortillas tight.

9. Add ¼” vegetable oil to clean skillet. Heat over medium heat until oil is hot.

10. Place tortillas in hot oil. Cook about 1 minute until browned.

 
Variations and Recipe Ideas:
Serve warm with sides of salsa, sour cream, and guacamole in small serving bowls.

Ground Chuck
Ground chuck is ground beef that is 80% lean and 20% fat. Ground chuck can be found in most supermarkets.

Cooking Tip

Green Chilies
For hotter taquitos substitute mild green chilis with finely diced serrano or jalapeno peppers. For taquitos with no heat at all, substitute mild green chilies with green bell pepper.
