Double Layer Tacos

Fun way to serve up ground beef tacos. Double layer tacos place a warm taco shell inside a refried bean covered tortilla. The shell gets taco mix, salsa, lettuce, and cheese added to make each taco complete.
Ingredients -
 

1 pound Ground Beef
1 (1.25 ounces) package Taco Seasoning Mix
3/4 cup Water
1 (4.6 ounces) package Taco Shells
12 small Flour Tortillas
1 (16 ounces) can refried beans, heated
3/4 cup Salsa (any variety)
1 1/2 cups shredded Lettuce
1 (4 ounces) cup shredded Monterey Jack Cheese

 
Preparation:
 

1. In large skillet, brown the ground beef.

2. Drain off most of the fat and liquid.

3. Stir in water and taco mix and cook over medium heat about 10 minutes, until sauce thickens.

4. Warm taco shells and tortillas.

5. Heat refried beans.

6. Spread 3 tablespoons refried beans on surface of tortilla. Place warm taco shell across center of tortilla and fold tortilla around taco shell.

7. Spoon 3 tablespoons taco mixture into taco shell.

Refried Beans
Mash 2 1/2 cups of boiled and mashed beans and put them aside. Put 2 tablespoons pork lard or olive oil on a pan and fry some chopped onion. Then add 1 chorizo or sausage and fry it until it's almost done. Chop one or two chipotles and remove the seeds Add chipotles to onion and chorizo. Cook additional 2 minutes. Add mashed beans. Cook additional 2 minutes.
