Fiery Taco Filling

Beef tacos made from tenderized beef and vegetables served on warmed tortillas and topped with cheese, tomatoes, lettuce, guacamole, and diced hot peppers.
Ingredients -
 
2 quarts Water
3 pounds Beef Chuck
1 small Onion, quartered
2 tablespoons Vegetable Oil
1 cup chopped Onion
1/2 cup chopped Green Bell Pepper
1 cup Green Salsa
1/4 cup chopped Fresh Cilantro
1 tablespoon chopped Jalapeno Pepper
 
Preparation:
 
1. Combine, water, beef and quartered onion in stockpot.

2. Bring to a boil over medium heat, reduce to low and simmer covered for 1-½ hours, until meat is tender.

3. Strain off broth and reserve.

4. Shred beef with forks.

5. In large saute pan, heat oil over medium heat.

6. Saute onion and bell pepper until soft.

7. Stir in 1-cup broth, beef, salsa, cilantro and jalapenos.

8. Heat taco mixture 4-5 minutes.

9. Serve hot.

 
Variations and Recipe Ideas:
Topping ideas: lettuce, ghuacamole, tomoatoes, diced onions and diced jalapenos.
 
 




Cooking Tip

Fresh Hot Torillas
Heavy oil in a large cast iron or non-stick skillet. Place torillas one at a time in oil and fry for a few seconds to heat through and lightly brown.

Oven Roasted Garlic
Some oven roasted garlic would be a great addition to this recipe. Preheat oven to 350 F. Remove the loose papery skin from the garlic bulb to expose the garlic cloves. Cut the tips of cloves. Roast garlic bulb for about two hour s, or until the cloves are soft. Garlic will squeeze out of bulb.
