Fish Tacos

Quick white fish tacos served in corn tortillas. Cod is tossed with vegetable oil, lemon juice, taco seasoning and sauteed until cooked through. Taco sauce made from mayonnaise, sour cream, taco seasoning and cilantro pours over white fish. Tacos are garnished with cabbage, tomato and a squeeze of lime.
Ingredients -
 

1/2 cup Non-Fat Mayonnaise
1/2 cup Non-Fat Sour Cream
1/4 cup chopped Fresh Cilantro
1 (1.25 ounce) package Taco Seasoning Mix, divided
1 tablespoon Vegetable Oil
2 tablespoons Lemon Juice
1 pound Cod or other White Fish Fillets, cut into 1-inch pieces
12 Taco Shells or 12 warmed Taco Size Corn Tortillas

Toppings:
shredded Cabbage
chopped Tomato
Lime wedges
Taco Sauce

 
Preparation:
 

1. In a small bowl, mix mayonnaise, sour cream, cilantro and 2 tablespoons taco seasoning mix.

2. In a medium bowl, add remaining taco mix, vegetable oil, lemon juice and cod

3. Heat large skillet over medium heat. Add cod mixture to skillet. Cook 4-5 minutes, until fish flakes easily.

4. Remove to serving bowl.

5. Fill taco shells or tortillas with cod mixture.

6. Top with shredded cabbage, chopped tomato and sour cream mixture,

7. Serve with lime wedges and taco sauce.

Chipotle Coleslaw
Combine 1/2 shredded head green cabbage, 1 julienned red bell pepper, 1 julienned yellow bell pepper, 2 tablespoons fresh dill, 1 tablespoon dill seed, 1/2 tablespoon chipotle powder and 1/2 cup mayonnaise in a large bowl and toss well. Season to taste with salt and fresh ground black pepper. Chill until ready to serve.
