Fresh Salmon Tacos

Amazing taco dish with salmon, cherry tomatoes, black beans, mexican corn, carrots, red onion and spices served in taco shells and topped with lettuce.
Ingredients -
 
Salsa:
11 ounces can Mexicorn, drained
1 cup quartered Cherry Tomatoes
1/2 cup Black Beans, rinsed, drained
1/2 cup shredded Carrots
1/2 cup Green Chile Salsa
1/4 cup diced Red Onion
2 tbs chopped Cilantro

Salmon:
1 tablespoon Olive Oil
2 Salmon Steaks
1/4 teaspoon each Salt and Pepper

8 Taco Shells
Shredded Lettuce

 
Preparation:
 
Salsa:
1. Mix salsa ingredients together in a serving bowl. Use immediately or refrigerate until ready to use.


Salmon:

1. Brush salmon with oil. Season with salt and pepper.

2. Heat a large non-stick saute pan over medium heat.

3. Saute salmon 4 minutes, turn and cook another 4 minutes

4. Remove from heat. Allow salmon to cool.

5. With a form, break salmon into chunks.

6. Place salmon along bottom of shells. Spoon salsa over salmon.
