Gourmet Chicken Tacos

Wonderful taco mixture recipe combining chicken, onion, garlic, and a variety of spices. Serve chicken mixture in taco shells with cheese, tomatoes, lettuce and salsa.
Ingredients -
 
1 medium Onion (3/4 cup), sliced
2 cloves Garlic, crushed
1/2 tablespoon Chili Powder
1/2 teaspoon Cumin
1/4 teaspoon Sugar
1/4 teaspoon Salt
1 tablespoon Vegetable or Canola Oil
2 1/2 cup coarsely chopped Cooked Chicken
1 (12 ounces) )can Tomato Sauce
8 Taco Shells, warmed
1 cup grated Cheddar Cheese (100 g)
1 cup Salsa
1 cup shredded Lettuce
1 cup coarsely chopped Tomato
 
Preparation:
 
1. In saute pan over medium heat, saute garlic, onion, cumin, chili powder, sugar and salt until onions are soft.

2. Reduce heat to low, add chicken and tomato sauce and saute 8-10 minutes, until chicken is heated through and sauce reduces.

3. Fill shells with chicken mixture, top with cheese and other toppings.

 
Variations and Recipe Ideas:
Heat refried beans and spoon a amll amount across the bottom of each shell before adding chicken.

Chicken Handling
Fresh chicken is always best. The chicken should have no odor. The skin should not be slick, and the flesh should feel firm to the touch. Always wash chicken prior to cooking.

Cheddar Cheese
Recipe calls for cheddar cheese. Substitute monterey jack or a mexican cheese for a different flavor to your tacos.
