Grilled Shrimp Tacos

Shrimp tacos made from shrimp grilled and basted with garlic butter, and served with a sour cream sauce, shredded cabbage and lime wedges. Perfect summer evening recipe.
Ingredients -
 

1/2 cup Sour Cream
3 tablespoons Mayonnaise
3 tablespoons Milk
1/2 teaspoon Ground Cumin
1 1/2 pounds Large Shrimp, peeled
3 tablespoons Butter, melted
2 large Garlic cloves, minced
4 Limes, cut into quarters
1/2 teaspoon Kosher Salt
8 6-inch corn Tortillas

2 to 3 cups finely shredded Green Cabbage

 
Preparation:
 

1. Preheat gas or charcoal grill to medium heat.

2. In small bowl, combine mayonnaise, sour cream, milk, and cumin.

3. In separate small bowl, mix garlic and butter.

4. Double skewer the shrimp.

5. Brush shrimp with garlic butter.

6. Grill shrimp 4 minutes. Flip and grill another 4 minutes, until shrimp are cooked through.

7. Warm tortillas on the grill, 30 seconds per side.

8. Divide shrimp evenly across tortillas. Serve with cabbage, sour cream sauce, and lime.

 
Variations and Recipe Ideas:
Serve with tomatillo salsa.
 
 





Cooking Tip

Double Skewers
You can purchase double skewers or you can run two skewers though each shrimp or prawn. Skewer the shrimp once and run a parallel skewer to hold the shrimp in place so that both sides are grilled equally.

Tomatillo Salsa
Saute 2 finely minced cloves of garlic and 1 large chopped white onion in 2 tablespoons olive oil until onion is translucent and soft. Add 2 cans chopped green chilies, 4 cans tomatillos, 1 teaspoon sugar, and 6 seeded and chopped jalapenos. Simmer 30 minutes.
