Peachy Chipotle Pork Tacos

Hot, peachy, pork tacos served on warm tortillas. Pork is sauted with honey, hot salsa, red wine vinegar and garlic. Taco mixture is served on warmed tortillas and topped with red onion, lettuce, avocado, lime wedges and cilantro.
Ingredients -
 
1 pound Boneless Pork Loin Chops (3/4 to 1 inch thick)
Salt and Fresh Ground Black Pepper
1 cup Frozen Sliced Peaches, chopped
1 cup medium Chipotle Salsa
3 tablespoons Honey
3 tablespoons Red Wine Vinegar
2 tablespoons finely chopped Garlic
10 (8 inch) Flour Tortillas
1/2 small Red Onion, thinly sliced
2 1/2 cups chopped Lettuce
2 Avocados, pitted, peeled and diced
2 Limes, cut into wedges
chopped fresh Cilantro, if desired
 
Preparation:
 
1. Heat large saute pan over medium heat.

2. Place pork chops in pan. Season with salt and pepper.

3. Cook 8-12 minutes, depending on thickness of chops, until chops are cooked through

4. Remove pork chops from pan.

5. In same saute pan, add peaches, salsa, honey, vinegar and garlic.

6. Cook about 5 minutes until salsa thickens.

7. Meanwhile, cut pork into bite size pieces and add to salsa mixture.

8. Warm tortillas.

9. Place across center of tortillas, fold tortillas.

10. Top with onion and lettuce.

11. Garnish with avocado, lime and cilantro.

Cooking Tip

Grilled Pork
Grilled pork chops works well in this dish when the pork is marinated and cooked through but not over-cooked. The grilling adds anothe level of flavor.

Grilled Tortillas
Place tortillas directly over high heat, allow to lightly brown and flip. Do not over cook or tortillas will not remain flexible.
