Taco Casserole

Easy taco casserole made with lean ground beef, onion, taco sauce, water, green chilies, taco seasoning mix, taco shells and mild cheddar cheese.
Ingredients -
 
1 pound Lean Ground Beef
1 small White or Yellow Onion, chopped
1 cup Thick and Smooth Taco Sauce
3/4 cup Water
1 (4-ounces) can Diced Green Chilies
1 (1.25-ounces) package Taco Seasoning Mix
12 Taco Shells, broken or equivalent Tortilla Chips
2 cups Shredded Mild Cheddar Cheese

Garnish:
Tomatoes, chopped
Green Onions, sliced
Sour Cream

 
Preparation:
 

1. Over medium heat, saute beef and onions until cooked through. Drain off excess fat.

2. Add taco sauce, water, green chilies, and taco seasoning mix to beef mixture. Reduce heat to low and simmer 3 to 4 minutes.

3. Preheat oven to 375 degrees.

4. Grease an 11x7-inch baking dish. Layer ½ of the broken taco shells on the bottom of the baking pan. Cover shells with ½ of taco mixture. Sprinkle with 1 cup cheddar cheese.

5. Repeat with remaining shells, taco mixture and cheese.

6. Bake 25 minutes or until bubbling and cheese has melted.

7. Garnish individual servings with tomatoes, green onions, and sour cream.

Tortilla Chips
If you are not using taco shells, substitute with yellow corn tortilla chips (not fritos) for best results.

You can substitute fresh jalapeno or serrano chilies for the diced green chilies in a pinch.
