Tofu Tacos

Tofu tacos is a quickly prepared recipe for a healthy alternative to meat. The long list of ingredients is largely the spices and toppings. Prepare everything in advance as this recipe comes together quickly,
Ingredients -
 

2 tablespoons Vegetable Oil
1 (16 ounce) package Garden Herb Tofu, crumbled
1/2 cup chopped Onion
1 clove Garlic, minced
1/4 teaspoon Paprika
2 teaspoons Chili Powder
1/4 teaspoon Cayenne Pepper
1/4 teaspoon Ground Cumin
1/4 teaspoon Salt
1/2 cup Tomato Sauce
1/2 Lime, juiced
1/4 cup chopped Fresh Cilantro
10 medium Taco Shells, heated
2 cups shredded Lettuce
2 Tomatoes, chopped
1 Avocado, peeled, pitted and diced
1 cup shredded Cheddar Cheese
1/4 cup Salsa

 
Preparation:
 
1. In a large saute pan, saute the oil, tofu, onion, and garlic for 4-5 minutes over medium heat.

2. Add paprika, chili powder, cayenne, cumin, salt, tomato sauce and lime juice. Saute another 3 minutes.

3. Add cilantro and remove from heat.

4. Spoon tofu taco mixture into serving bowl.

5. Prepare taco shells.

6. Spoon tofu mixture across bottom of taco shells.

7. Serve with toppings.

Cooking Tip

Crispy Tofu
As a variation to the crumbled tofu, buy a nice block of firm tofu, drain and squeeze every last drop of water out of it by pressing into paper towels. Cut the tofu in long strips and proceed with the recipe, cooking the tofu until golden brown and more the consistency of chicken strips. Cooking time will be slightly longer.
